Sheer Khurma

Sheer khurma is a traditional rich creamy dessert generally made during celebrating Eid in Central Asia. It is a type of vermicelli pudding cooked in thickened milk with lots of dry fruits like almonds, walnuts, cashews, raisins, dates, saffron strands, cardamoms, pistachios and rose water are also added. This special dish is served on the morning of Eid days in the family after prayer as breakfast.
This is an Indian version of sheer khurma which consists of dry fruit. Basically it was made from vermicelli, dates and milk. "Sheer" signifies thickened milk whereas "khurma" signifies dates.
Traditionally it takes time in cooking, we are using a shortcut here for thickening our milk.

Equipment

  • Pan or Wok
  • Pressure Cooker

Ingredients
  

  • 1 litre Full fat milk
  • 400 gm Condensed milk
  • 8-10 Chopped almonds
  • 8-10 Chopped walnuts
  • 8-10 Crushed cashews
  • few Saffron strands
  • Thin vermicelli
  • 10-12 Raisins
  • 4-5 Dates
  • 4-5 Cardamom
  • 8-10 Chopped pistachios
  • 1 tbsp ghee
  • 1/4 cup Grated coconut

Instructions
 

  • Place a closed tin of condensed milk in the pressure cooker for 3 whistles. After this, keep your tin in the freezer to let it cool.
  • In a steel pot, we will put our full cream milk for boiling. Add dates, cardamom and condensed milk to the pot. It will reduce your cooking time to 70% and gives a natural brown colour to the dish.
  • On the other hand, take a pan and apply some ghee and roast all dry fruits. Keep some for garnishing. Then add crushed vermicelli and roast for 3-4 minutes on medium flame.
  • Add grated coconut in the pan and turn off the flame. Transfer your pan material to our boiling milk. Let it boil for 5 minutes on low to medium flame.
  • Turn off the flame and your Sheer Khurma is ready. Garnish it with more dry fruits. Serve it hot or cold according to your choice.
