Carrot pudding | Snowflake carrot dessert

Bored of eating traditional style gajar halwa or carrot pudding. Carrot pudding is a very healthy recipe specially to be ate in winters i.e cold season. Garnish it with handful of dry fruits. Do try this !!..It’s yummy kids and adults are gonna love this. Its a jelly version of carrot pudding. Equipment

  • A round pan or small wok
  • A pan

Ingredients
  

  • 1/2 Kgs Carrot
  • 2 Cups Water
  • 1/2 Cup Powdered sugar
  • 3 Tbsp Cornflour / Gelatin / Agar-Agar/ Arrowroot powder
  • 1 Tsp Vanilla essence
  • Some oil for greasing

For garnishing :-

  • Desiccated coconut
  • Chopped Pistachios

Instructions
 

  • Peel carrots and chop them. Take a wok pour 2 cups of water and carrot. Boil for 5 minutes on medium low flame. Sieve the carrots and let it cool down for 5 minutes. Grind them later.
  • In a cooled pan (preferred non sticky ones) add carrot paste. In a bowl dissolve 3 tbsp cornflour in 1/2 cup water (boiled carrot water). Add powdered sugar and above paste in pan. Mix well and reduce it by heating it. You can add 1 tsp Vanilla essence to it.
  • Grease small bowls with oil. After reducing paste put in bowls. Tap it and refrigerate it for 5-6 hours or for overnight.
  • Demould puddings. Coat them in desiccated coconut. Garnish it with chopped pistachios. Serve it cool.

Notes

  1. When you boil carrot in wok make sure that carrots are dipped in water.
  2. Mix all the ingredients in a cool pan.
  3. You can add vanilla essence or cocoa powder in paste.
  4. Coat with coconut or you can coat with melted dark chocolate.
